- In the past, intermittent attempts to produce sugar in the Everglades on a commercial basis failed largely because of lack of proper water control, unsuitable varieties and cane diseases. Today, there has been a tremendous increase in sugar production due to the high increase in sugar yield. This has been possible because of the extensive research of the various sugar companies, biologists and experiments resulted in the development of cane varieties particulary adapted to the climatic conditions of the Everglades, improved methods of cultivation, better drainage and water control practices and better harvesting procedures. This report presents the history and evolution of the sugar manufacturing industry in Florida.
